Every pie starts with dough we make every morning from four ingredients: King Arthur flour, salt, water and yeast. Each batch cold ferments for 36 hours before it's pressed into a cast iron pan. Most get our house sauce, made with Stanislaus 7/11 tomatoes, then Wisconsin brick cheese all the way to the edge of the pan.
Toppings are well-sourced (Calabrian peppers, pepperoni, cured meats) or made here (Italian sausage, ranch, pesto, hot honey, chili oil). Pizzas bake at 615 degrees in deck ovens, and the cheese at the edge of the pan caramelizes. That's the Maillard reaction, and it's the part your friends will ask about.

Premium spirits, fresh ingredients, syrups we make ourselves, and half-decent technique behind the bar. Drinks rotate when we feel like it, except Christmas and Halloween, which get their own menus whether we feel like it or not. (We do feel like it.)
